You’ve probably heard me say it before (or seen it, since I type these posts) but breakfast is my favorite meal of the day. I could eat it for most meals and be happy as a clam. Now, if you make a breakfast food that takes only a few minutes to prepare and that is portable enough for me to eat with my hands or in the car or on the go, then watch out world, because I will be taking you over…once I’ve eaten my pancakes!
Protein pancakes are great to make in bulk because they keep their taste and composition very well when refrigerated or frozen. Prepped pancakes make my morning effortless and help me make healthy food decisions when I come home starving after working all day and doing a hard workout.
This recipe should yield five to seven meals of pancakes. Of course that depends on how many you eat in one sitting and on how large you make them. Cover them with your favorite topping or toast them up and eat them plain!
