This is a leftovers remix and it’s oh so quick to make. Chicken is a staple in our house and, more often than not, if you were to come over and sneak a peak in our fridge, you’d find a sea of Tupperware containers holding our bulk-prepped food. Its going to be a given that we have some form of chicken prepped and normally it is in the form of chicken breasts. Chicken is such a versatile meat and it can be eaten alone, sliced up and placed on a salad, diced up in a chicken salad wrap, put in an omelet, tossed in a stew, pulled apart for tacos…. You get the point.
For this recipe, I used a cooked chicken breast (it can be baked, grilled, or boiled, though grilled is my favorite) and wrapped in bacon, placed on a panini press (or a George Foreman-style grill) and served on a bed of spinach, because let’s be honest, Popeye needs his spinach, and bacon makes your taste buds do cartwheels.
